Her name is Jessica Préalpato and she is the best pastry chef in the world: for the first time, a woman
According to The World’s 50 Best Restaurants, Jessica Préalpato is the best pastry chef in the world. The association, founded in 2002, has awarded her refined and natural patisserie.
The jury, consisting of around a thousand experts in gastronomy, decreed that the creations of Jessica Préalpato were the best in the world.
Jessica is the pastry chef of the restaurant with three Michelin stars, “Alain Ducasse au Plaza Athénée” in Paris, where the chef is Romain Meder, who focuses intently on the naturalness of the dishes and the ingredients. Jessica Préalpato has modelled this “natural philosophy” on the art of confectionery.
This entails a reduced reliance on sugar and cream in favour of a constant search for the exaltation of the flavours of the carefully selected raw materials. Almost stealing the whole show is fruit, for which the term “Desséralité”, from dessert and Naturalité, has been coined.
The pastry chef expressed her thanks on Instagram: “I am extremely proud that my pastries of naturalness have been honoured this year. Thank you The World’s 50 Best! I also sincerely thank Alain Ducasse and my chef Romain Meder, who has trusted me for four years and who brings his unique touch to every dessert”.
Some of her creations are truly special: strawberry and fir yogurt, rhubarb with sprouting wild black rice and rice husks, hemp citrus fruits or Yannick Colombié pears with shiso, sake and verbena.
These and other recipes can be found in the book she has published, “Desséralité”, containing more than 50 recipes created by her in the Alain Ducasse au Plaza Athénée Restaurant, part of the Dorchester Hotel Collection.
