The Japanese by The Chedi Andermatt is the highest starred restaurant of Japanese cuisine in the world. It is located in the Swiss mountains at 2,300 meters above sea level. A truly top local to live a unique experience!
It has only been open for a year but it is already a must for gourmets. The Japanese by The Chedi Andermatt has in fact won the recognition of the Michelin Guide and can therefore boast of being the highest starred restaurant of Japanese cuisine in the world. Located in the heart of the Andermatt-Sedrun ski area, the exclusive gourmet retreat is led by Executive Chef Dietmar Sawyere, already holder of 1 Michelin star at The Japanese restaurant inside the 5-star luxury hotel The Chedi Andermatt.
The gastronomic proposal
The gastronomic proposal curated by Chef Sawyere tells the secular Japanese cuisine through refined Shidashi Bentō and Omakase Kaiseki menus in addition to the classic Sushi and Tempura. Of course, the finest wagyu beef is not missing from the dishes available. And it is proposed with a focus on sustainability. In fact, the starred Japanese cuisine restaurant gets its supplies from the first Swiss breeding of fine cattle which is based on a farm in Andermatt. A guarantee therefore of a 0 Km consumer experience.
Housed in the new futuristic refuge designed by architect Christina Seilern, near the arrival station of the lifts at the top of Mount Gütsch, The Japanese by The Chedi Andermatt has 38 indoor seats. In addition, there are 34 seats on the panoramic outdoor terrace.
The Gütsch restaurant is also located within the same building. It is run by Chef Markus Neff, awarded 1 Michelin star for cuisine based on local products and traditional cantonal and Swiss dishes. During the winter season The Japanese by The Chedi Andermatt is open Monday to Sunday from 11am to 3pm, depending on the weather.
